Chicken Curry, DIY

Wanted to cook curry for the whole family so decide to do so, no special occasion.

1. Curry Powder (in pre-mixed pack from supermart)
2. Chicken wings (pack of 8)
3. Potato (3)
4. Coconut milk
5. lots of chilli

1. With a little bit of oil, fried the potato until turn golden brown.
2. Put in the chicken and fried with the potato.
3. Then, add the curry powder and chilli and fried the mix together until the favor is in.
4. Finally, add coconut milk.
5. Cook the pot until potato and chicken is cooked.

Chicken Kaarage

Here's how to make the Fried Chicken Chunks:

Chicken Thighs ( Cut each chicken thigh meat into 6 equal portions)
Then season with light soya sauce, sugar (very little, maybe 0.5 teaspoon), pepper (a few dashes), sesame oil, cooking wine and oyster sauce. (Don't know how much these seasoning I put in, I don't measure. hehe. Just use the 'agaration' method)
I use more soya sauce than oyster sauce. Roughly 5 parts of soya to 1 part of oyster sauce.
Season for a 2 to 3 hrs or overnight.

Before frying, add corn flour into the seasoned chicken. Mix. Then crack an egg. Mix. Then add a few tablespoons of plain flour into the mixture. Mix thoroughly.
How thick you want the batter to be, depends on how much plain flour you add. If the mixture is too dry, you can add a little water.
Then set the mixture aside to rest, say at least 15 mins for the batter to settle well before frying.
Then deep fry.

Serving suggestion: Served with coconut rice, some fried fish balls and asparagus.


Honey BBQ Pork Ribs

This is how I prepare the BBQ Pork ribs: (Using that 'Agaration' method)

1. Marinate the ribs with soya sauce (abt 1 tablespoon for 1 slab of pork ribs), a dash of pepper and sugar (half a teaspoon for 1 slab of pork ribs). Leave it in the fridge (covered or wrapped, so as not to lose any moisture) to season for a few hours. ( I think at least 2 to 3 hours, or if you can leave it over night.)

2. Adjust the oven to 180 degrees (I used a fan forced oven). Heat up the oven for about 15 mins or till the light goes off.

3. Remove the ribs from the fridge and lay the slabs on a cookie tray. (Meat side facing up). Then spread Char Siu Sauce on the ribs. (About 1 tablespoon for 1 slab should be good enough. Spread the sauce on the meat side will do.) Put in the oven and cook for about 40 to 45 mins. ( This is roughly how I judge if the ribs are ready: When its almost ready, you will see 'bubbles' on the ribs. Leave it for about 10mins before removing from the oven.)

4. Pour some cooking oil and honey into a small bowl. (Maybe about 1 tablespoon combined for each slab). Apply it on the hot ribs. Then return to the oven to continue baking for another 15 mins or so. (Or Check before it gets burnt.)

5. Remove ribs from oven and enjoy your Honey BBQ Pork Ribs!

5 Steps Easy Banana Cake

This is a recipe I found on the internet. Following this recipe produces a banana cake that is soft, buttery and moist. If you like your banana cake to be so, then follow the 5 steps below:

1) 150g butter (soften)
3/4 cup of sugar
- cream well

2) 2 eggs lightly beaten
- gradually add into the mixture from 1)

3) 3 very ripe bananas (mashed)
2 tablespoon milk
- add to mixture from 2) and mix

4) 1.5 cup self-raising flour
0.5 teaspoon bicarbonate soda
- fold into mixture from 3)

5) Bake in oven for 40 to 50 mins at 170 degrees

Delightful Chicken Parcels

We had an early lunch yesterday. By 3.30pm, we were hungry again and I had to scramble to get up a snack to feed. Then I came up with this snack which I called Chicken Parcels. Here’s how to make it:


2 Chicken Thighs
5 pcs of Dried Mushrooms (Soaked till soft)
1 Carrot
1 stalk of Spring Onion (to spice up colour)

1. Diced all the above ingredients. Set aside.
2. Heat some oil and brown some minced garlic and ginger.
3. Put in the diced chicken thighs and stir fry.
4. Next add carrot and mushrooms. Stir fry a while.
5. Add a little water for the ingredients to cook thoroughly.
6. Stir frequently until water dries up.
7. Scoop out and set aside to cool.


You need 3 sheets of Pampas puff pastry for this recipe. Cut each sheet into 4 equal portions.
Wrap fillings with the pastry and put into oven on a baking tray to bake for 15 mins.

This recipe makes 12 chicken parcels.
