Delightful Chicken Parcels


We had an early lunch yesterday. By 3.30pm, we were hungry again and I had to scramble to get up a snack to feed. Then I came up with this snack which I called Chicken Parcels. Here’s how to make it:

Fillings:

2 Chicken Thighs
5 pcs of Dried Mushrooms (Soaked till soft)
1 Carrot
1 stalk of Spring Onion (to spice up colour)

Steps
1. Diced all the above ingredients. Set aside.
2. Heat some oil and brown some minced garlic and ginger.
3. Put in the diced chicken thighs and stir fry.
4. Next add carrot and mushrooms. Stir fry a while.
5. Add a little water for the ingredients to cook thoroughly.
6. Stir frequently until water dries up.
7. Scoop out and set aside to cool.

Pastry:

You need 3 sheets of Pampas puff pastry for this recipe. Cut each sheet into 4 equal portions.
Wrap fillings with the pastry and put into oven on a baking tray to bake for 15 mins.

This recipe makes 12 chicken parcels.
